GF Coconut Chocolate Brownies

Ingredients

  • non-stick cooking spray or butter
  • 25g unsweetened cocoa powder
  • 60g gluten-free all-purpose flour
  • 1/2 tsp sea salt
  • 120g dark chocolate chopped
  • 180g unrefined coconut oil
  • 200g raw cane sugar
  • 4 large free range eggs
  • 1 tsp vanilla extract

Method

  1. When ready to cook, set the Traeger temperature to 175°c and preheat with the lid closed for 15 minutes. Grease a 9-inch square baking pan with non-stick spray or butter and line with parchment paper. 
  2. In a medium bowl, whisk together the flour, cocoa powder, and sea salt.
  3.  Add the chopped chocolate and coconut oil to a large heat-proof bowl. Over a double boiler or in the microwave, melt the chopped chocolate and coconut oil together until smooth. Leave to cool slightly. 
  4. Add the sugar, eggs, and vanilla extract to the melted chocolate and whisk well to combine. Whisk in the dry ingredients until incorporated. Pour the batter into the prepared baking pan. 
  5. Place the pan on the grill grates. Close the lid and bake for approximately 20-25 minutes, until a toothpick inserted into the center of the brownies comes out clean. The brownies will be somewhat gooey, continue to bake for a further 5-10 minutes if you prefer a drier brownie. 
  6. Remove the brownies from the grill and leave to cool before cutting into squares. Store in an airtight container at room temperature for up to 3 days.
